Ingredients
- 1 cup - All purpose or white whole wheat flour
- 1.5 cups - milk of your choice (or ½ water and ½ milk)
- 2 large eggs
- 1 tsp oil or melted butter
- (optional) pinch of salt or sugar
- (optional) 1 tsp vanilla or almond extract

- Ice cream
- Fresh fruit or jam
- Whipped cream
- Nutella or chocolate chips
- Nut butters
- Powdered Sugar
Savory Add-ons
- Spinach
- Cheese
- Lentils
- Beans
- Deli meat

Equipment
- Flat bottom nonstick pan
- Spatula
Instructions
- Mix wet ingredients (milk ,eggs, oil) and slowly sift in flour to prevent lumps
- Heat a nonstick frying pan on medium-low flame. When hot, spray with cooking spray to coat bottom of skillet. Pour 1/4 cup crepe mixture into pan, swirling pan slightly to make crepe thin and smooth.
- Cook for 1 minute or until bottom of crepe is light golden brown. Flip; cook 30 seconds to 1 minute or until light golden brown. Set aside on a plate and repeat with remaining crepe mixture.
- To serve, spoon your desired filling into each crepe.
Notes
- The crepe batter can be kept in the fridge for four days, so make it ahead to last throughout the week!
- The batter can also be made in the blender for easier prep
